I wasn't really sure what to call this recipe. It's a cake; but it's not as thick as a normal cake; but it's fluffy and moist like a cake. It tastes like a cake; but kinda looks more like a bar. In the end, I decided I was putting way too much thought into this; and just named it a "cake bar"
This is another "hide the veggies and the kids will eat it" recipe. Although, the carrots are pretty obvious in it! I peeled the zucchini, however so it's not quite as obvious!

There are a million (and one) recipes on the internet for carrot zucchini bread/cake etc. I'm really not inventing anything new here, kids! Still, I always like to put as much of my own spin on things as I can, so I added some things, took some things away from a couple of recipes I found and this was the result. I hope you enjoy it.
I have decided not to do the picture card with the recipe any longer. I was making these in pic monkey; but honestly, it was just too much work. I wish blogger had a recipe plugin like Wordpress does; but it doesn't....which can lead to a whole new discussion about how I'm contemplating moving to a custom domain; but that's a conversation for another time.
